Crowd-Pleasing Mango Lime Salsa
Make this if you want to impress your friends
A few years ago a friend brought this salsa to a cookout. It was SO good. I texted her for the recipe, and she said: “Mango, jalapeño, red onion, cilantro. Lime juice and salt.”
Last night we had people over for house church, a small gathering we host every other month or so. We have dinner together, the kids play, and we read and discuss scripture. A few people are gluten free, so I made chicken tacos.
Even though we had these a couple weeks ago (with avocado lime sauce), the mango lime salsa made it seem like almost a different dish.
We grilled the chicken on the Blackstone with Blackstone Street Taco seasoning, and made enough chicken to have it last night with tacos, then again with dinner tonight and tomorrow night.
Crowd-Pleasing Mango Lime Salsa
Add to a small bowl: 2 diced mangos, ~1/8 cup red onion, ~1/8 cup fresh cilantro, juice from 2 limes. Eyeball the red onion and cilantro—maybe add half, taste, then add the other half. I hate to show my lack of type A-ness, but I didn’t measure it. 🤭 It’s one of those things that’s pretty hard to mess up. I didn’t even add the salt or jalapeño. Our friends loved it.

Other Sides
We served the tacos with fresh guacamole (2 avocados, juice from 2 limes, salt to taste), fresh tomatoes and cucumbers, cheese, regular salsa, and plain yogurt (I was out of sour cream—oops!). We had flour tortillas + corn tostadas. Watermelon sealed the deal.
Once again, the kids made burritos or (microwaved) quesadillas, and this versatile dinner was a hit.
